Southwest Tofu Scramble
Ingredients: 2 Large eggs, 1/2 block tofu, 1 Small yellow onion, 1/2 canned black beans, 1/2 canned Yellow Corn, 1 Medium Zucchini, 1 Medium Tomato, 1/2 Jalapeño, 1/2 red pepper, Cilantro, salt, pepper, ground turmeric, smoked paprika, red chili pepper flakes, 1 clove garlic.
Direction: First you will need to chop your ingredients. Dice tofu into small squares. Throw tofu in skillet with medium to high heat until browned on each side. Toss in onion, garlic, red pepper, along with your seasonings. Add in the zucchini and let simmer for about 2 minutes. Next you will need to add your canned ingredients. Once all ingredients are in, crack 2 eggs into small skillet and fry until yolk is to your liking. Add more salt and pepper if needed. Plate. Garnish with cilantro and jalapeño. ENJOY!
