Curried Couscous with Tofu

The base of a buddha bowl is usually a grain, or sometimes I use cauliflower rice as a substitute. This instance I used couscous. For protein, I used tofu in which I pan seared and for the veggie component I used sautéed spinach, zucchini squash and mushroom.
