I've named this salad the "Detox Salad" because of the many components. First you start with a layer of lettuce at the bottom, could be spinach, romaine, arugula, etc. Next you choose as many ingredients as you like and finally chop them up. The purpose of chopping the toppings up is to help digestion. I chose beets, carrots, quinoa, red onion, chickpeas, egg and avocado. Its a great idea to add at least one grain and one protein. My good fats are coming from the avocado and my protein from the egg and chickpeas. I don't eat meat so I did not include any in this salad but you can add chicken, or any other protein of your choice. I would recommend using a homemade dressing or something very light. Enjoy!
